AMARETTO-MARZIPAN CAKE
Our family is obsessed with Marzipan. When we were kids and out and about with our mama, she used to always get us these mini marzipan fruits that were such a treat. So given our obsession with marzipan, you can imagine how much our family loves this cake. Marzipan, almonds, amaretto -- need we say more?
INGREDIENTS
1. Cream the butter and the sugar together and then add one egg at a time
2. In a separate bowl mix the ground almonds, flour, baking soda and baking powder together.
3. Add the flour mixture to the egg mixture and mix well. Add the greek yoghurt and milk to the batter, and mix well.
4. Add the Amaretto and the Almond extract
5. Carefully fold in the chopped Almonds and the marzipan.
6. Prepare a baking tin and pour in the batter. Sprinkle some almonds and the extra sugar on top.
7. Bake for 35-40 minutes, until a skewer comes out clean.
