FUNFETTI CAKE

Funfetti, confetti, we all love fetti!

This cake is so yummy and fun, my baby cousin loved helping us make it and of course adding all the sprinkles on top ;) It's a perfect birthday cake for kids that will smack a huge smile on their faces!

INGREDIENTS

METHOD

  • 300 g flour

  • 200g caster sugar + 3 tbl spoons 

  • 3 egg yolks

  • 5 egg whites 

  • 150 ml milk

  • 1 cup buttermilk

  • 80 g butter

  • 1 vanilla bean

  • 1 tsp baking soda

  • 1 tsb baking powder

  • 150 g sprinkles

  • extra sprinkles for icing

  • 400 g mascarpone

  • 100 g icing sugar

  • 250 g cream cheese

1. beat the mascarpone and the cream together.

2.in a separate bowl, mix the egg yolks and the sugar together until nice and pale. then add to the mascarpone mix.

3. melt the chocolate in a heat proof bowl over simmering water. Pour 1/3 of the mascarpone cream into a separate bowl and add the chocolate.

4. using a blender, crush the hazelnuts and add them to the chocolate mascarpone mix.

​

5. dip the ladyfingers in the milk and use them to make the bottom layer of the tiramisu. add a layer of mascarpone cream that has no chocolate in it. then make another ladyfinger layer and now pour the chocolate mascarpone mix over them. Make one more layer with ladyfingers and pour over the white mascarpone mix.

5.  Leave in the fridge to cool, and just before serving sprinkle some cocoa powder over it.
