FATTOUSH SALAD

The perfect go-to when in need of a light and fruity summer salad!

TOTAL TIME: 30 min

Serves: 4-6

INGREDIENTS

1. Wash all the ingredients and then start Chopping the Cucumber, the scallions, parsley and mint.

2. in a pan, Toast the almonds. Add some salt.

​

3. cut the cherry tomatoes in half.

​

4. Add everything together in a big salad bowl with the pomegranate seeds and lecctuce as well. 

​

5. Toast the pita bread, either in the oven or in the toaster, until it gets the consistency of chips. Break it up and add it to the salad.

​

6. Prepare the dressing by mixing all the ingredients together in a glass. Once you are ready to serve, pour the dressing over the salad. Done!

METHOD

Difficulty grade: easy

  • 1 cucumber

  • 2 cups of cherry tomatoes

  • 1 cup of parsley

  • 1 cup of mint

  • Baby romaine lettuce 3 cups (but really it’s as much as you want)

  • 1 cup of pomegranate seeds

  • 2 scallions chopped or one red onion

  • A handful of toasted almonds

  • 2 pita breads, toasted until they become like pita chips.

For the dressing:

  • Juice of 2 lemons

  • 100 ml of white wine vinegar

  • 1 tsp. of cinnamon

  • 1 garlic toe

  • 1 tblsp. Maple syrup

  • 2-3 tbsp. of olive oil
