Pistachio Gelato

Everyone who knows me, knows how much I love gelato. Love might even be an understatement. I'm obsessed with it. When I was still in school, I used to have 6 - 9 scoops everyday. So you can only imagine how excited I am about making my very own gelato.  

INGREDIENTS

  • 1 cup of Pistachios

  • 1 cup of Whole Milk

  • 1 cup of Cream

  • 1/2 cup of sugar

  • 1 /2 Tsp.  Almond Extract 

  • 4 egg yolks

1. blend the pistachios and add ½ of the sugar

2. In a saucepan, add the milk, the cream, the pistachio/sugar mix and bring it to boil.

​

3. Remove from the Flame as soon as the mixture starts to boil. 

​

4. In a separate bowl, mix the egg yolks and the remaining sugar until the mixture starts to thicken and go pale.

​

5. Add the milk mixture to the egg mixture and stir well.

​

6. Return the custard to the saucepan, and over a low flame, let it heat up.

​

7. It is VERY important that the custard does not start to boil. It'll make it go bad. 

​

8. Let the custard cool completely. This can take 2-3 hours. What I usually do is simply pop it in the fridge overnight.

​

9. In your ice cream MAker, let the custard turn into gelato. Follow the instructions of your ice cream maker, as each one varies slightly. It usually takes about 20-40 minutes.

10. AND YOUR Done! Enjoy your delicious gelato with some sprinkles of chopped pistachio and waffles and smilleeee :D
