STRAWBERRY CAKE
The perfect fruity summer taste! Our mum used to make a similar cake for us, so now we created our own version of it because we just love fresh strawberries in the summer.

METHOD
INGREDIENTS

4 eggs

40g butter

200g flour

100g sugar

100ml milk

80ml olive oil

1 lemon

125g sour cream

1 tbsp baking powder

2 tsp vanilla extract

600g strawberries
-
2 tbsp strawberry marmalade
-
for jelly: 100g jelly powder + 150g sugar
1. PREHEAT THE OVEN TO 180°C. GREASE A 20CM CAKE TIN.

2. SEPARATE THE EGGS AND BEAT THE egg yolks together with the butter and sugar until fluffy.
3. add the milk, oil and vanilla extract to the egg yolks and beat well. then grate in the lemon zest.

4. fold in the bowl of flour to the egg yolks.
​
5. add sour cream to the batter and mix well.
6. whisk the egg whites until they form stiff peaks. then gently fold it into the batter.
7. pour the batter into the cake tin and spread out evenly. bake for about 35mins until the skewer comes out clean.

8. let the cake cool a little before you evenly spread a thin layer of marmalade on top. wash the strawberries and cut away their stem. place the strawberries on the cake until the surface is covered.

9. for the jelly follow instructions on packaging. or, mix the powder with the sugar. then add it to 750ml cold water. mix it and then heat it up in a pot and let it boil for a couple of seconds. take it from the heat and let it cool for about 5 mins (it's important that you stir the jelly now and then). pour the jelly onto the cake until the strawberries are covered (make sure it's covered evenly).

10. Let the cake cool a couple of minutes before serving or refrigerate it for an hour. finally remove the cake from the tin.
